CHILDREN'S CHOICE COOKIES 2 1/4 c. flour 1/2 c. sugar 1/2 c. brown sugar, packed 1/2 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. nutmeg 1 c. shortening 1/2 c. peanut butter 1/4 c. applesauce 1/2 tsp. vanilla 1 egg 1 c. rolled oats (not instant)
Heat oven to 350 degrees. In a large bowl, combine 1 1/4 cups flour, both sugars, soda, salt, cinnamon, nutmeg, shortening, peanut butter, applesauce, vanilla and egg; mix well. Stir in remaining 1 cup flour and oats.
Shape mixture into 1 inch balls and place 2 inches apart on ungreased baking sheet. Flatten in criss-cross pattern with a fork dipped in sugar. Bake 12-14 minutes or until light golden brown.
